Watermelon Vodka

1.5 oz Rock Town Watermelon Vodka
0.75 oz Genepy
1 oz Rosemary Simple Syrup**
0.25 oz Citric Acid Solution**
2 dashes Lemon Bitters
2 dashes Peychauds Bitters
Add all ingredients to a shaker tin over ice and shake until well chilled. Strain into a chilled coupe glass and garnish with a lemon peel.
**Rosemary Simple Syrup: add 6 sprigs of rosemary to quart container, fill halfway with sugar and then fill to top with hot water. Stir until sugar is dissolved then put lid on and let steep for 30 minutes. Strain out rosemary.
**Citric acid solution: 10% citric acid solution → 10 grams of citric acid for every 100 grams of water. Shake to dissolve acid.
